About This Recipe

A trendy Vietnamese drink originating from Huế, featuring robust coffee mellowed by a salted cream foam. The salt in the whipped cream accentuates sweetness and gives a salted-caramel note when mixed into the iced coffee.

Ingredients

  • 1 cup strong brewed coffee, chilled
  • 1/3 cup cold milk
  • 6 tablespoons heavy cream
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • Ice cubes
  • Cocoa powder (for garnish, optional)

Instructions

  1. 1Brew a cup of strong coffee (Vietnamese coffee or espresso) and let it cool. You can sweeten the coffee itself slightly if desired, then chill it.
  2. 2In a mixing bowl, combine heavy cream, sugar, and salt. Whip with a handheld frother or whisk until the cream thickens to a spoonable, foamy consistency (soft peaks).
  3. 3Fill a serving glass with ice cubes. Pour in the cold milk, then add the chilled brewed coffee and stir.
  4. 4Spoon a generous layer of the salted cream foam on top of the coffee.
  5. 5Dust with a pinch of cocoa powder on the foam, if desired. Serve with a straw – sip the coffee through the salted cream or stir some of the cream in for a sweet-salty finish.
