A frothy iced coffee made with instant coffee, known as a summer staple in Greece. It’s shaken to produce a thick foam, then served over ice with water or milk and sugar according to taste.

Ingredients

  • 2 teaspoons instant coffee (Nescafé recommended)
  • 1 teaspoon sugar (optional, to taste)
  • 1 tablespoon cold water (for frothing)
  • 1/2 cup cold water or milk (to top up)
  • Ice cubes

Instructions

  1. 1In a shaker or jar, combine instant coffee, sugar, and 1 tablespoon cold water.
  2. 2Seal and shake vigorously for about 20–30 seconds until a thick foam forms.
  3. 3Pour the coffee foam into a tall glass filled with a few ice cubes.
  4. 4Rinse the shaker with a bit of additional water to get all the remaining coffee, then pour into the glass.
  5. 5Top up the glass with cold water (or a mix of water and a splash of milk) to fill. Stir and serve with a straw.
