About This Recipe

An unusual Finnish/Swedish Lapland treat where hot coffee is poured over chunks of a mild, chewy cheese called leipäjuusto (bread cheese). The cheese soaks up the coffee like a sponge, softening and becoming squeaky, to be enjoyed at the end of the cup.

Ingredients

  • 1 cup hot coffee (freshly brewed)
  • 1/4 cup cubes of leipäjuusto (Finnish "bread cheese"), about 1/2-inch pieces

Instructions

  1. 1Place the cheese curd cubes (leipäjuusto) into an empty coffee cup or mug.
  2. 2Pour the hot coffee over the cheese curds. Let it sit for a minute or two to allow the cheese to warm up and soak in the coffee.
  3. 3Sip the coffee as usual. The cheese will soften and absorb some coffee, adding a gentle creamy texture to each sip.
  4. 4After drinking, scoop out and enjoy the coffee-soaked cheese pieces at the bottom of the cup with a spoon. They will be warm, slightly sweet from the coffee, and have a squeaky texture when bitten.
