  • 1 teaspoon ube extract (or powdered ube mix)
  • 1 cup ice cubes
  • 1/2 cup almond milk (chilled, or milk of choice)
  • 1 teaspoon sugar (optional, to taste)
  • 2 shots espresso (or 1/2 cup strong brewed coffee)

Instructions

  1. 1Add the ube extract to an empty glass. Fill the glass with ice cubes.
  2. 2Pour in the chilled almond milk over the ice. Stir the milk with the ube extract until the mixture turns a uniform purple color. (If using sugar, dissolve it in the hot espresso first, or use a liquid sweetener, since the cold milk won’t dissolve sugar well.)
  3. 3Slowly pour the hot espresso shots over the ube milk. This will create a layered effect (purple milk at the bottom and dark coffee on top).
  4. 4Serve the latte as-is for a layered look. Before drinking, stir gently to mix the coffee and ube milk. Top with additional ice or a little extra milk if desired.
